Baked Meatballs I made these little bad boys at the request of my good friend and neighbor who came over Sunday - it was his last supper before moving to Queens for law school. Mike really loves a home-cooked meal so it’s always fun to feed him. He also requested my famous garlic bread, which I’ll post next.Recipe serves 4-6. Ingredients: 1/2 pound each of ground pork, sirloin and veal, 1/2 cup finely grated Parmesan cheese, 1 egg, 1 teaspoon garlic powder, 1 teaspoon Kosher salt, 1 teaspoon dried oregano, 1/2 teaspoon red pepper flakes, 1/2 cup breadcrumbs (Italian/Panko). Instructions: Preheat oven to 400. In a large bowl combine all ingredients except only half of the breadcrumbs. Mix together with your hands until well incorporated. Place the rest of the breadcrumbs in a shallow bowl. Form balls about the size of a golf ball, but a little bigger. (I like to use a small ice cream scooper and smooth by hand). Roll them in the breadcrumbs and place in individual mini muffin tins. Bake for 20 minutes (or until cooked through), flipping once after ten minutes. Serve warm over linguini/spaghetti with red sauce.
